SOUTH AMERICA LODGE

FARM-TO-TABLE DINING

Farm-to-table, also known as farm-to-fork, is defined as a social movement where restaurants source their ingredients from local farmers, avoiding long distance shipments and food preservatives. This concept means that the ingredients are picked at peak freshness and are bursting with flavour and vitamins. One of the first restaurants to come up with the farm-to-table concept was Chez Panisse in Berkeley California, opened in 1971. After a very successful launch, the movement began to grow steadily during the late decades of the 20th century across the globe.

Farm-to-table has come a long way since Alice Waters first opened Chez Panisse. It is now the fastest growing trend in gastronomy with farm-to-table restaurants opening in every major city. Some restaurants, many of them pioneers in the industry, are doing this so well that they’re definitely worth traveling for….

Your first stop should be in Beverly Hills, California, back to the original roots of the gastronomic movement. Nestled in a Spanish-style building with a truly incredible patio is A.O.C, your go-to place for local and flavourful dishes. Not only is the food delicious and healthy, the wine bar is too, with an eclectic selection of organic, biodynamic and sustainable spirits.

One of LURA’s all-time favourite farm-to-table dining spots is Noma in Copenhagen. By avoiding foreign ingredients in favour of those found in Scandi regions, this culinary mecca has attained the coveted title of World’s Best Restaurant on four occasions and has inspired many restaurants across the world. Noma lets the ingredients dictate its food, and the menu changes according to what the Scandi land and waters have to offer. During the colder months, the restaurant acts as a sea-to-table restaurant, with focus on the freshest fish from Nordic oceans; then when the earth begins to grow green, vegetables take the centre stage. And finally, in autumn, guests are treated to a cornucopia of mushrooms, berries and game.

The ever-growing trend has taken a new twist in the last year and given itself a new name: table-to-farm dining, al fresco. Head to Rosewood Castiglion del Bosco in Tuscany in the summertime for the ultimate organic and al fresco dining. Literally seated amidst the chef’s garden, enjoy a flavourful menu of handpicked veggies accompanied with a rustic barbecue from local farmers.

Another extraordinary al fresco table-to-farm magical setting is at Siete Fuegos in Argentina. The dining room is unusual; acres of vineyards and green landscape surround you as you enjoy a four-course meal, prepared using ingredients from the robust on-site gardens and paired with wine from the resort’s private vineyards.

NAYARA LUXURY TENTED CAMP

For a different experience on land, why not travel to the Nayara luxury tented camp in the Arenal Volcano National Park in Costa Rica. Due to open in December 2019, it will be of the first luxury camps in Central America, nestled in a picturesque reserve known for its hiking trails, hot springs and the Arenal Volcano. Nayara provides nature guides for trekking across dried lava fields and hiking through the Arenal Hanging Bridges Park, but there’s an argument to be made for simply relaxing in one of 29 luxe “tents” as well. The rooms blend bright, modern accents with safari-style touches to create interiors that are decadent, while still capturing a sense of amid-the-tropics adventure. An environmentally sustainable destination, Nayara is taking steps to cultivate the system rather than disrupt it. Based in the centre of a sloth sanctuary, they are increasing the number of Cecropia trees (a firm favourite of the sloth) to further nurture the beloved creatures, proving a unique destination with a positive impact on the environment.
